Chicken Porcupine Meatballs
Are you someone that enjoys a good meatball? How about porcupine meatballs? No, I am not talking about ones that are really made from porcupine..lol. They just are called that because they kinda look like a porcupine from having rice in them.
Anyways, I have grown up on having porcupine meatballs, but we always made ours with beef. Well, now that I am older and trying to eat healthier (I still have that bad for you treat every now and then..shhh) I have been adapting my old recipes to new healthier ones. I have come up with a pretty awesome recipe for chicken porcupine meatballs! Plus, if you eat gluten-free, you can still have these! Just be sure to get a gluten free sauce (if you don’t make your own) as that is the only thing in this recipe that you would have to watch for gluten in.
Another great thing about the meatballs is that you can freeze them. If you have extra time, cook a double batch and then let one batch cool. Then you can place in a freeze-safe container. When you have a night that you do not have a lot of time to make dinner, just pop these bad boys out of the freezer and warm them up! Just like a pre-made freezer meal you get in the stores, just a lot healthier for you.
Pressure Cooker Directions:
If you have a pressure cooker like the Power Pressure Cooker XL like I have or the Instant Pot, you can make this recipe in there as well. Simply mix the porcupine meatballs the same. Then pour a little of the sauce in the bottom of the cooker. Place the meatballs in the cooker and then cover with the rest of the sauce. Hit the meat button and then adjust the time to 25 min.

Chicken Porcupine Meatballs - Gluten Free
Ingredients
- 1 16 oz pack Fresh Ground Chicken or Turkey or Beef
- 1/4 Cup Rice Uncooked
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1/2 Tsp Black Pepper
- 12 oz Pasta Sauce
- 1 Egg
- 1/2 Tsp Italian Seasoning Herb Mix
- 1/4 Cup Water
Instructions

Mix all ingredients (other than the sauce and water) in a large bowl.

Make medium size meatballs and place them in a slow cooker. (makes about 6 and they will not be overly firm)

Mix the sauce and water and dump it over the meatballs that are in the slow cooker.

Cook on high for 5 hours.
