EASY Blackberry Cobbler

This easy blackberry cobbler is such a tasty way to use up those blackberries. Plus other then the berries it uses just items from the pantry to make it!

Ingredients

  • 12 oz Washed Blackberries its about 3 cups
  • 1 Cup Baking Mix or flour. If using flour you will also need to add 2 tsp baking powder
  • 1 Tbsp Coconut Oil Melted or butter
  • 1 Cup Splenda or sugar
  • 1 Tbsp Vanilla
  • 1/2 Cup Water

Instructions

  1. Preheat the oven to 375

  2. Grease an 8×8 pan.

  3. In a large mixing bowl mix the sugar (or Splenda) and blackberries together. Don't smash the berries, just coat them.

  4. Dump the berry sugar mixture into the greased pan.

  5. In a mixing bowl mix the baking mix, oil, vanilla and water and mix well. It should be like a thick pancake batter.

  6. Pour the mixture over the berries. It does not have to cover them all just most of them.

  7. Place in the preheated oven and bake for 38 minutes. If yours is golden brown then it is done. If not, turn the oven on hi broil and cook for another 1 to 2 minutes until it is golden brown.

  8. Remove and serve hot or allow to cool. Goes great with a big scoop of vanilla ice cream or whipped topping!
