Preheat oven to 350 degrees. Place parchment paper to a 9x5” loaf pan and spray with cooking spray.
In a large mixing bowl, mix flour, xanthan gum, baking soda, baking powder, pumpkin pie spice, and both sugars. Whisk to combine well. Stir in optional nuts.
In another bowl, mix oil, eggs, milk, pumpkin, banana and vanilla extract. Whisk to combine well.
Mix contents from both bowls together.
Pour mixture into prepared loaf pan and bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
