Mock Potato Salad

Such a tasty summer side dish while staying low carb. You will have no idea this mock potato salad does not have any potatoes in it!

Ingredients

  • 2 Large Spaghetti Squash
  • 1 Large Cucumber peeled and diced
  • 5 Hard-Boiled Eggs diced
  • 1 Cup Mayonnaise
  • 2 Tbsp Yellow Mustard
  • 2 Tbsp Sweet Relish I use sugar free
  • 1/2 Tsp Black Pepper
  • 1/2 Tsp Salt

Instructions

  1. Cook the squash following the steps forĀ Instant Pot Spaghetti Squash. After it is cooked, scoop it out and place the meat of the squash in a strainer and allow it to cool to room temp. It is very important that you strain it or you will have a watery salad.

  2. Depending on the size of your cooker, you may have to cook one squash at a time.

  3. Then dump the squash into a large mixing bowl. Using a large spoon you can chop/mashup and of the large pieces.

  4. Next add in your mayonnaise, mustard, relish, salt, pepper, and eggs. Give it a good mix until it is fully blended.

  5. Then stir in the chopped cucumbers. Cover the bowl and place in the fridge to chill before serving.
