Homemade Zuppa Toscana Soup

Ingredients

  • 1 Medium Onion diced
  • 1 1/4 Tsp Red Pepper Flakes
  • 1 lb Mild Italian Sausage
  • 4 Slices Bacon sliced small
  • 1 Cup Spinach or Kale chopped
  • 64 oz Chicken Broth
  • 1 Tbsp Garlic minced
  • 4 Medium Potatoes sliced thin
  • 1 Cup Heavy Cream

Instructions

  1. Cook sausage and red pepper flakes in a large skillet until cooked well. Drain and set aside.

  2. Cook bacon until cooked well. You want to cook until it is just before the crispy stage. Reserve a small amount of bacon grease. Crumble bacon and set aside.

  3. Add grease to a large pot, add onion, and garlic and cook until translucent. Just be careful not to burn it.

  4. Pour the broth into the onion mixture and bring to a boil.

  5. Add potatoes and cook until tender.

  6. Reduce heat and stir in cream and sausage and bacon.

  7. The last thing to do is to add the spinach or kale into the soup just a few minutes before serving
