Pumpkin Pecan Shortbread Cookies

  • 1 cup softened butter
  • 1 cup powdered sugar
  • ¼ cup solid packed pumpkin
  • 1 egg yolk
  • 1 cup chopped pecans
  • 2 cups flour
  • ½ cup cornstarch
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • Pecan halves for decorating if desired


  1. Heat oven to 350 F.
  2. In a large bowl, cream together the butter and powdered sugar until creamy.
  3. Add the egg yolk and pumpkin. Beat until the mixture lightens in color – about 1 minute.
  4. Stir in the chopped pecans.
  5. Sift together the flour, cornstarch, and spices. Mix into the batter to make very stiff dough.
  6. Roll out between sheets of parchment to 1/4-inch thickness. Cut with cookie or biscuit cutters. Gently press half of a pecan onto each cookie, if desired.
  7. Bake on parchment for 10-12 minutes, or until the bottom of the cookies is golden brown.
  8. Slide parchment onto cooling rack and allow the cookies to cool completely.
