Almond Poppy Seed Lemon Bread

  • 3 tbsp Poppy Seeds
  • 3 Large Eggs lightly beaten
  • 1/2 Cup Olive or Canola oil
  • 2 Cups All Purpose Flour
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 2/3 Cup Sugar
  • 1/4 Cup Milk
  • 1/2 Cup Vanilla Yogurt
  • 1 tsp Vanilla Extract
  • 1 1/2 tsp Almond Extract
  • Lemon Zest from one fresh lemon
  • Lemon Juice from one fresh lemon
  • 1/3 Cup Sugar for glaze topping
  • 2 tbsp Lemon Juice for glaze topping
  • 1/4 tsp Vanilla Extract for glaze topping
  • 1/4 tsp Almond Extract for glaze topping


  1. Preheat the oven to 350 degrees. Put the rack on lower middle position.

  2. Grease one standard (9x5) size loaf pan and set aside.

  3. In a large mixing bowl, combine poppy seeds, baking powder, flour and salt. Mix until incorporated.

  4. In another bowl, whisk together the milk, eggs, oil, sugar, yogurt and both extracts until well-incorporated.

  5. Add wet ingredient bowl to the dry, folding together with spatula until just incorporated. Be sure not to over mix.

  6. Dump batter into prepared loaf pan. Bake 55 minutes or until toothpick inserted in the center comes out clean.

  7. To make the glaze, mix ingredients noted for glaze in a bowl and whisk together until combined. This would be the last four ingredients on the list.

  8. Then brush glaze generously over warm bread. Allow the bread to cool on a wire rack.
