Paleo Blackberry Instant Pot Cobbler

You don't have to miss out on amazing foods you love when you are on the Paleo diet. This Paleo blackberry Instant Pot cobbler will not let you down! While the topping is a little gooier than baked cobblers, it still tastes amazing. Plus for not using sugar, this comes out sweet!

Servings 6 People

Ingredients

  • 6 Medjool Dates pitted
  • 1/2 Cup Water
  • 4 Cups Blackberries frozen or fresh
  • 1 1/4 Cups Paleo Pancake Mix
  • 1/2 Cup Coconut Oil
  • 1 Cup Water for putting in the Instant Pot

Instructions

  1. In glass measuring cup, heat the 1/2 cup water in the microwave until it starts to boil. Takes about a minute and a half. Then place the dates in the water and set aside.

  2. Next thing you want to do is pour one cup water into the inner pot of the Instant Pot. Then place the trivet in the inner pot.

  3. Now, lightly grease a deep dish or pan that will fit into your Instant Pot. I used this one here for my 6 qt Instant Pot.

  4. Next, dump the berries into the greased pan. 

  5. In a mixing bowl add paleo pancake mix and coconut oil. Use a pastry knife or fork to combine. Pour about tbsp of date water over and mix. It should be a crumbly mixture when you are done.

  6. Using a fork or knife, smash/chop the dates in the water. Then pour the dates with water over the berries.

  7. Now dump crumb mixture over the berries and spread out.

  8. Place a piece of foil over the pan. This will keep the water from the Instant Pot from dripping on the cobbler. Then carefully lower the pan into the inner pot on to the trivet.

  9. Place lid on and make sure valve is on sealing. Push manual (should be on high pressure) and add cook time of 15 minutes.

  10. After it beeps that it is done, allow NPR (natural pressure release). When that is done, remove lid and foil and serve!

Recipe Notes

If you want to dry out the topping more, after removing it from the Instant Pot, you can place under a broiler for 2-3 minutes to brown it up. Just be sure to watch it so it does not burn.
