Instant Pot Homemade Blueberry Syrup

Have a ton of blueberries you need to use up? Check out this recipe for Instant Pot homemade blueberry syrup/sauce. Easy to make and oh so good! Plus it is Paleo and no refind sugar added.

Ingredients

  • 1 lb Blueberries fresh or frozen
  • 4 Whole Medjool Dates pitted
  • 1 Cup Water
  • 1/2 Cup Organic Raw Honey

Instructions

  1. Add everything but the honey into the inner pot of the Instant Pot. Place lid on the pot and lock it into place. Be sure the valve is on closed.

  2. Push manual (high pressure) and select cook time for 8 minutes.

  3. When it beeps that it is finished allow it to natural pressure release.

  4. When the pressure is out, remove the lid. Then using a hand blender or a potato masher, crush the blueberries until they are well blended.

  5. This is where you need to choose to strain or keep the pulp. If straining, do so now with a strainer or nut bag. Just be sure to let cool slightly before putting in nut bag.

  6. Now add the honey to the mix and push the saute button on the Instant Pot. Cook it like this for 3 minutes making sure to stir it often.

  7. Now simply pour into a Masson jar or another glass container with a lid and store it in the fridge until you are ready to use.
