Chicken And Veggie Foil Pack Hobo Dinner On The Grill

Ingredients

  • 1 Tbsp Garlic Powder
  • 1/4 Tsp Black Pepper
  • 1/4 Tsp Salt
  • 3 Tbsp Avocado Oil
  • 1 Juice From Lemon about 1 oz
  • 1 oz Water
  • 4 small Fresh Yellow Squash sliced
  • 1 large Zucchini sliced and slices halved
  • 1 Green Bell Pepper chopped
  • 1/4 Yellow Onion chopped
  • 2 large Fresh Chicken Breasts
  • Heavy Duty Aluminum Foil
  • Extra Avocado Oil for greasing the foil

Instructions

  1. Mix the garlic, salt, black pepper, water, lemon juice and 3 tbsp of oil into a large mixing bowl. Make sure that it is fully blended.

  2. Chop the chicken and veggies and mix it into your oil mixture. Make sure you mix it so that everything is coated. Cover and store in the fridge for 3 hours (if you have time this gets the best flavor, but if in rush you can skip)

  3. Cut four pieces of foil that are about 15 inches long. Lightly coat one side of each piece of foil with a little of the extra oil.

  4. Evenly divide the chicken veggie mix on each of the sheets of foil. Making sure that a little of the liquid from the bowl goes with each one.

  5. Now you need to close each of the packs. Pull the two ends of the foil together and fold it down two times. Then do the same thing on each end.

  6. Heat grill to 400 degrees. Place packets on grill and close the top. Cook on medium-low heat keeping it about 300 - 350 degrees for 12 minutes. Then flip over and cook another 12 minutes or until chicken is done.

Recipe Notes

After you remove from grill it can be served right away or it will also stay warm for a little while if you leave the packs closed and stack them on top of each other.
