Homemade Blackberry Jelly With Chia

Ingredients

  • 5 Tbsp Chia Seeds after measured grind to a powder
  • 1 Tbsp Fresh Lemon Juice
  • 8 oz Fresh Blackberries washed
  • 2 Cups Water
  • 1 Cup Splenda OR 3/4 cup sugar

Instructions

  1. Add berries and water to the pot and bring to a simmer, On medium heat, simmer for about 10-15 minutes, As they are cooking you want to smash them several times every few minutes.

  2. Pour the berries and water over a mesh strainer into a bowl. Be sure to press the berries in the strainer to get all the liquid you can into the bowl.

  3. Stir lemon juice and sweetener into the liquid until fully blended.

  4. This next step you need to do slowly. If you don’t you will end up with one big lump of chia powder. Slowly add in chia powder a little at a time until fully mixed.

  5. Allow mixture to slightly cool then pour in jars with a lid and store in the fridge.
