Are you like me and have blackberry bushes coming into season? This is a great small-batch recipe for homemade blackberry jelly with chia. Such a burst of flavor!
Homemade Blackberry Jelly With Chia
The great thing about small batch recipes like this blackberry jelly is you only need a small number of berries to make it. That works out perfectly because if you grow your own, they don’t all ripen at the same time.
This blackberry jelly is a little different than most. That is because I use chia seeds to thicken it and not pectin.
I do it this way for a few reasons. First I have to use a sugar substitute (but I did make a note in the recipe if you want to use sugar) as my husband is a diabetic and normal pectin does not work well with it.
I know there are some low/no sugar pectins out there but I figure why not just add some healthy fiber in to thicken it? Chia seeds are loaded with fiber and other healthy things that are great for the body.
I was trying to figure out if I should call this a jelly or a jam. It is not as thick as your normal jelly but it does not have chunks of fruit in it like a jam either. So I guess it is kinda in a world of its own.
This recipe makes 2 eight-ounce jars. If you need an even smaller batch you can easily cut the recipe in half.
This is so tasty on toast, muffins, over ice cream, pancakes, or just about anything you would use a fruit topping on.
How To Make This Jelly:
Add berries and water to the pot and bring to a simmer. On medium heat, simmer for about 10-15 minutes. As they are cooking you want to smash them several times every few minutes. You can use a potato masher or slotted spoon. You just want those berries to crush down into juice.
Pour the berries and water over a mesh strainer into a bowl. Be sure to press the berries in the strainer to get all the liquid you can into the bowl.
Stir lemon juice and sweetener into the liquid until fully blended.
This next step you need to do slowly. If you don’t you will end up with one big lump of chia powder. Slowly add in chia powder a little at a time until fully mixed.
To make powder I just grind the measured chia seeds in a coffee grinder.
Allow mixture to slightly cool then pour in jars with a lid and store in the fridge.

- 1 Tbsp Fresh Lemon Juice
- 8 oz Fresh Blackberries washed
- 2 Cups Water
- 1 Cup Splenda OR 3/4 cup sugar
