This unstuffed peppers recipe gives you all the flavors of traditional stuffed peppers. But just makes it super easy as it has a shorter cooking time. Plus I just love that this is pretty much in all in one dinner and can be served as unstuffed pepper bowls.
You could almost call this a one pot meal but because we technically make the rice in another pot I just call it one of my favorite skillet meals.
In this unstuffed pepper skillet recipe we used orange bell peppers, green bell peppers, and yellow bell peppers. You could also use red bell peppers if you wanted. We just did not have any on hand at the time.

A. Yes! If you are looking for a lower-carb option to unstuffed peppers then cauliflower is the perfect solution. Just be sure to not overcook it as it will turn to mush.
Q. How should leftovers be stored?
A. If you have any leftovers, they should be stored in an airtight container in the fridge.
Q. How long will leftovers last in the fridge?
A. I would try and use up any leftovers within 3 days of putting them in the fridge.
Q. If I use beef what should I use?
A. While we made ours with ground chicken to cut down on fat, beef can be used. I would just stick with lean ground beef.
Q. Can this be made in the slow cooker?
A. Yes, with a little adjusting. You would need to cook the meat so that it is all chopped up and does not cook as one lump in the cooker. You would also use 1/4 cup of uncooked rice. Add everything to the cooker and also add 1 cup of your choice of vegetable broth, beef broth, or chicken broth. Cook with the lid on for 3 hours on high or 6 hours on low. Cooking this way will result and a slightly mushier texture than the skillet.
Q. Can you pressure cook or make this as Instant Pot unstuffed peppers?
A. Yes! Again this too will need slight adjusting of the recipe. Cook meat using the saute feature of the Instant Pot or pressure cooker first. Drain if needed. Add 1/4 cup uncooked rice, 1 cup broth of choice, and all other ingredients to the pot. Give it a stir, place the lid on and seal the valve. Cook on high pressure for 5 minutes. When done natural release for 5 minutes then quick release the rest. Cooking this way will result and a slightly mushier texture than the skillet.

- 1 lb ground beef, chicken, or ground turkey
- ½ cup mozzarella cheese, shredded
- 2 tablespoons dry onion, minced
- 1 green bell pepper, diced small
- 1 yellow bell pepper, diced small
- ½ cup cheddar cheese, shredded
- 1 orange bell pepper, diced small
- 1 cup White rice, cooked (could also use brown rice)
- 8oz can tomato sauce

Prepare uncooked rice per package instructions, and set aside.
In a large skillet cook ground meat with onion, peppers, and seasonings over medium-high heat until done. Drain if needed.
