Instant Pot Homemade Blueberry Syrup
Nothing like the taste of fresh blueberries. If you grow your own or get from a farmers market or CSA and looking for a way to use them up, this is a great recipe to try. It is a recipe for Instant Pot homemade blueberry syrup or some may call it a sauce.
Homemade blueberry syrup or sauce is great on pancakes, biscuits, toast, ice cream, cakes and all kinds of other things.
This is a super easy recipe to make and does not take a lot of cooking skills. There are two options for this recipe. After cooking, you can either leave all of the pulp in the homemade blueberry syrup/sauce so that you get all the full vitamins and fiber that the blueberries have to offer. This is what I do when I make ours.
However, if you do not want that thick and chunky feel to the syrup/sauce, you can strain it so that it is smooth. You can do this using a screen strainer and push it through with the back of a spoon. Another great option (and I think an easier one) is to put it in a nut bag and squeeze the juice out.
This recipe is sweetened with dates and raw honey. If you are someone that needs things even sweeter and do not watch your sugar intake, you can replace them with 1 cup of organic sugar.
Don’t have an Instant Pot? No worries, you can still make this recipe using a pot on the stove. Simply use the same directions as below but instead of putting in the Instant Pot, put it in a pot on the stove. Cook on medium heat until the berries are super soft and easy to mash.

This is where you need to choose to strain or keep the pulp. If straining, do so now with a strainer or nut bag. Just be sure to let cool slightly before putting in nut bag.

Now add the honey to the mix and push the saute button on the Instant Pot. Cook it like this for 3 minutes making sure to stir it often.

Could palm sugar be dubstituted for the honey and if so how much? Eager to try this.
Reuse Grow Enjoy says
Hi Carla, I would think you could as I have also made with just normal sugar. However, I have never used palm sugar so not sure how much you would need to use. I would say start with a small amount and keep adding till it is the sweetness you like.

Hi how much sugar to use in place of the honey?
Reuse Grow Enjoy says
1 cup of sugar would replace the honey and the dates.
