Paleo Tuna Cakes Made With Sweet Potatoes
Most tuna cakes are fried in a pan full of oil. So when you eat them you end up eating a lot of oil and grease. With this recipe, we are going to avoid that by baking them in the oven.
You will need a nice cookie sheet and some parchment paper or silicone baking mat. You can skip the paper/mat if your cookie sheet is a nonstick one.
This recipe only takes about thirty-three minutes to make from start to finish. It will make about ten to twelve cakes/patties depending on the size you make them.
However, if you are needing to feed a crowd, this recipe can very easily be doubled or tripled.
How To Make These Paleo Cakes:
Start by preheating the oven to 400 degrees. Then spray a baking sheet with non-stick cooking spray or you can add a piece of parchment paper or silicone baking mat. After you have the pan ready, set it aside.
Next, grab a medium mixing bowl, add all ingredients and combine using clean hands. Pretty much like you do when you make meatloaf. Now use a ⅓ measuring cup to scoop up the mixture. Then form into patties from the scooped mixture.
I say use a scoop because it helps to keep all the patties around the same size. If you just want to wing it you can.
Next, add the patties to the prepared baking sheet. Bake the patties in the preheated oven for 20-23 minutes. You want to flip them halfway through so they cook evenly on both sides.
When done, remove patties from the oven. You can serve with your favorite dipping sauce, guacamole, or a squeeze of fresh lime juice. These also make a great addition to a green garden salad.
