Squash Cucumber Tomato Garden Salad
If you have you grow your own garden, use a CSA or shop at farmers markets, this time of year is packed with lots of great produce. If you are looking for something different outside the normal garden salad, I have just the thing for you. It is a recipe for a squash cucumber tomato garden salad.
This cucumber tomato salad recipe is super easy to make and only takes a few minutes. Plus it is super healthy and should just about fit any diet need. If you are doing Paleo or Whole30, simply leave out the vinegar and you are good to go.
This is a dairy-free, sugar-free, low fat, gluten-free, vegan, low carb and just all around good for you salad!
For the dressing, I used this avocado oil, but you could also use olive oil in its place if you wanted. If you don’t have yellow squash you could also use zucchini or just add some of it in too for even more veggies.
After you make this squash cucumber tomato garden salad, I have a feeling it will become a summer favorite!
If you are looking to make a larger patch to take to a gathering, simply double everything in the recipe and you are good to go!

Squash Cucumber Tomato Garden Salad

Ingredients
- 2 Large Cucumbers quartered slices
- 1 Medium Yellow Squash quartered slices
- 5 oz Grape Tomatoes halved
- 2 oz Avocado oil
- 2 oz Raw Apple Cider Vinegar
- 1/4 tsp Black Pepper
- 3 grams Fresh Dill chopped
- 3 grams Fresh Chives chopped
Instructions

Add all veggies and herbs into a large mixing bowl.

In a small bowl or measuring cup, mix oil, pepper, and vinegar together until blended well. Then pour over veggies.

After you have poured the dressing over the salad, mix well until veggies are fully coated. Cover and chill for at least an hour before serving.
