How To Make Cucumber Chips With Salt & Vinegar
I am going to show you how to make cucumber chips with salt and vinegar but these could easily be made with the flavor of your choice. The steps would pretty much be the same, just change the flavoring.
A few ideas of flavors you could do would be salt and pepper, BBQ, lime, Italian, dill, chili just to name a few.
These can be made in the oven or in a food dehydrator. The oven is a little faster but will heat up the house. The dehydrator takes a little longer but does not make the house as hot.
If you are good with a knife you can slice the cucumbers with that, you just want to make sure to keep them thin and about the same thickness. I have found it to be much easier to use a mandoline like this one.
Making Chips:
Start by selecting the right cucumbers for chips. You want to try and use the small to medium-size ones. The ones that are really large do not work as well as their seeds tend to be larger and harder making the chip not turn out as well.
Wash the cucumbers really well and make sure you get all the little prickly parts off the peel.
Using a knife or mandoline slice the cucumbers thin. You want them to be thin but not so thin that they are see-through.
You do want to make sure they are all about the same size thickness so they all dehydrate evenly at the same time.
In a large bowl add oil, salt, and vinegar and mix around. Coat each piece lightly with mixture.
Place the pieces on the dehydrator racks. Make sure they do not overlap each other or they will not dry right.
Place the lid on and dehydrate for 7-10 hours on 130 degrees. The chips will be dry and crisp when they are done.
Oven Directions:
Place the pieces on a lined cookie sheet (can use a silicone baking mat) and bake on 175°F for about 3 to 4 hours until crispy.

- 1 Tbsp Vinegar
- 1/4 Tsp Salt

I normally only make a small batch as over time they are not as crunchy. Never thought to freeze them. I will have to give that a try.

If you can adjust the temperature to a low setting I would think so. However, I have not tested it that way yet.

No, a microwave would not work for making the chips. It would just cook the cucumbers and not dry them out like a chip.

Has this been tried with a ranch dip mix? Would I use the same amount of oil or 2 TBLS due to not using the vinegar? Would I use substitute the salt fir ranch dip mix? Very interested in making these for school snacks!

I have not tried it with ranch mix. I would think it would still work as long as you are using a dry mix. I would say use 2 tbsp oil and no salt if using ranch. Let us know how it turns out if you try it.
