How To Make This Cobbler:
Start by preheating the oven to 375. Grease an 8×8 pan.
In a large mixing bowl mix the sugar (or Splenda) and blackberries together. You just want the sugar to coat the berries and for the berries not to be smashed.
Dump the berry sugar mixture into the greased pan.
In a small mixing bowl mix the baking mix, oil, vanilla and water and mix well. It should be like a thick pancake batter.
Pour the mixture over the berries. It does not have to cover them all just most of them.
Place in the preheated oven and bake for 38 minutes. If yours is golden brown then it is done. If not, turn the oven on hi broil and cook for another 1 to 2 minutes until it is golden brown.
Remove and serve hot or allow to cool. Goes great with a big scoop of vanilla ice cream or whipped topping!
