Instant Pot Pumpkin Butter
While I made this Instant Pot pumpkin butter recipe using homemade fresh pumpkin puree that I made in the Instant Pot, you could use frozen or canned if you want. However, I am pretty sure after you see how easy making your own puree is, you will be hooked.
If you do use canned, try to keep it as natural as you can by using an organic pumpkin puree. But if you do choose to make your own, make sure you save your seeds. You can make roasted pumpkin seeds later and make the most of your pumpkin.
I love using fresh pumpkin puree for my recipes as it allows you to get all the amazing pumpkin health benefits that pumpkin has to offer. Did you know that 1 cup of pumpkin puree has about 83 calories, 19.82 grams of carbs, 7.1 grams fiber and 0.69 grams of fat?
By having such a low carb count and high fiber, it makes it a great food for anyone that is a diabetic. It is also really good for those following the Keto diet.
This recipe is sweetened with raw organic honey and Medjool dates. It may not be as sweet as some other pumpkin butter out there, but I think it is spot on! If you do need it a little sweeter, feel free to add a little more honey. You could also use sugar if you choose to.

How To Make Pumpkin Butter:
Add all ingredients to the inner pot of the Instant Pot. Then put the lid on and lock it in place. Make sure the valve is on seal. Push the manual button and add a cook time of five minutes. Then when it is done to a quick pressure release.
Next, use an immersion hand blender to blend everything until smooth with no lumps.
After it is smooth, push the saute button and cook for another five minutes stirring frequently. DO NOT walk away! This cooks really hot and you will need to keep stirring so you do not burn it. You want all the water to cook away so you are left with a nice thick pumpkin butter.

Ingredients
- 12 Medjool Dates
- 1 Tsp Pumpkin Pie Spice
- 1 Cup Water
- 2 Tbsp Raw Organic Honey
- 3 1/2 Cups Pumpkin Puree
Instructions

When you have all the liquid cooked out and it is a thick texture it is done. Allow to cool and then store in airtight containers in the fridge.

I think you could make it on the stove or a slow cooker. I have not yet made it that way, but I am sure it could be done. I would try maybe medium heat and cook until the dates are good and soft and blendable. Then blend it. Return to heat and cook it down until it is thick enough for you. Let us know how it turns out if you try it that way.

Dates are used as a natural sweetener. I have not tried it with a sugar free substitute so I can not say how well it will turn out.
