There is nothing like a freshly made bowl of macaroni and cheese! It is one of those foods that is comfort food, but too much of it can pack on the pounds. If you don’t trust yourself to stick to one serving, then you will want to give this macaroni and cheese for one recipe a try!
One good thing about making your own macaroni and cheese recipe is you can make it fit your dietary needs. Such as if you are avoiding gluten, simply replace the pasta with gluten-free pasta.
You can even make this up ahead of time and then put in the fridge to take to work with you. Then simply pop it in the microwave to heat it up when you are ready to eat your lunch.
Simply typing up this post is making me want to go and make a serving! Not sure who came up with the idea of mixing pasta and cheese, but boy I am happy they did. One of the best combinations ever!

Macaroni And Cheese for One
Ingredients
- 1/2 Cup Milk
- 1 Tbsp Butter
- 1/2 Cup Macaroni can use gluten-free
- Salt to taste
- 1 Tbsp All-Purpose Flour can use gluten-free
- 1/2 Cup Shredded Cheese your choice
- Black Pepper to taste
- Pinch of Paprika and Cayenne Pepper optional
Instructions

In a small saucepan bring lightly salted water to a rolling boil. Add macaroni and cook according to box directions.

While the pasta is cooking, melt the butter in a separate small saucepan over medium heat.

Once the butter is melted, whisk in flour and cook until mixture thickens – about 1 minute. Pour in the milk and continue to whisk to keep a smooth consistency until mixture thickens and bubbles (about 3 minutes).

Remove pan from heat and stir in shredded cheese. Add salt and pepper to taste. If you want to kick it up a notch, add (optional) pinch of paprika and cayenne pepper, and stir.

Drain pasta once cooked and fold it into the cheese sauce until completely coated. Serve warm.
