Mock Potato Salad – Low Carb, Potato & Pasta Free
This salad is low carb and is potato and pasta free. It is a great way to get in some extra veggies for those that don’t care for them. I gave my husband some of this mock potato salad and he had no idea it had no potatoes until I told him.
This recipe is super versatile so you can truly make it your own. I used spaghetti squash in place of the potatoes. They really just take on the flavors of everything you add.
One of the most important tips for making this salad is to make sure you drain the squash after cooking it. If not it will water down the salad.
I simply cook my squash in the Instant Pot and then when I scoop it out, I put it in a strainer and allow it to cool and drain at the same time.

How To Make This Salad:
Cook the squash following the steps for Instant Pot Spaghetti Squash. After it is cooked, scoop it out and place the meat of the squash in a strainer and allow it to cool to room temp.
Depending on the size of your cooker, you may have to cook one squash at a time.
It is very important that you strain it or you will have a watery salad. You just want the inside part of the squash and not the hard skin.
Then dump the squash into a large mixing bowl. Using a large spoon you can chop/mashup and of the large pieces.
Next add in your mayonnaise, mustard, relish, salt, pepper, and eggs. Give it a good mix until it is fully blended.
Then stir in the chopped cucumbers. Cover the bowl and place in the fridge to chill before serving.
