Slow Cooker Herb Chicken
With Potatoes, Carrots And Mushrooms
Cooking in a slow cooker just makes life easier, doesn’t it? Love that I can toss it in and when dinner rolls around it is all ready to go! If you are looking for a new slow cooker herb chicken recipe to try, I have one for you. I am going to share my recipe for slow cooker herb chicken with potatoes, carrots, and mushrooms.
If mushrooms, carrots or potatoes are not your favorites, you can always leave it out or replace them with your favorite vegetables. A few others that would pair nicely with herb chicken would be sweet potatoes, broccoli, squash and so on.
Another great thing about this recipe other than you can cook it in the slow cooker, it is also a Whol30 compliant! It could also very easily be a Paleo recipe as well if you swap out the white potatoes with sweet potatoes.
This recipe takes four and half hours to cook. It will serve about four people depending on the size portions your family needs. Or you could always make this even for one to two people and then put the leftovers in glass containers and have them for lunch for the week.

Slow Cooker Herb Chicken With Potatoes, Carrots And Mushrooms
Ingredients
- 4 Medium Boneless Skinless Chicken Breasts
- 2 Cups Chicken Broth
- 5 Medium Fresh Carrots cut
- 5 Medium Potatoes cut
- 1 8 oz pk White Mushrooms washed
- 1 Tbsp Italian Seasoning Herb Mix
- 2 Tbsp Avocado Oil
- 3 Cloves Fresh Garlic crushed
Instructions

Dump the broth, potatoes, mushrooms, carrots and garlic into the slow cooker.

Now mix the seasoning mix with the oil and coat the chicken with it. After the chicken is coated lay it on top of all the other ingreadants in the slow cooker.

Cook on high for four and a half hours.

I did make this and it was good but my chicken wasn’t tender and came out dry. I also feel like there needs to be a gravy mixture added when done.

Sorry to hear you had dry chicken, mine is always nice and juicy. Maybe it was the cut? Was yours thick of thin breasts? If you want to make a gravy you can use a little of the broth that it cooks in and whip up a batch on the stove.

Sorry I did not test this recipe on low. I cooked it on high for 4.5 hours.
