These are such an easy and wonderful dinner idea that packs a tasteful punch. Plus these Whole30 meatloaf sweet potato muffins are great for parties as appetizers as they are a nice single-serve item.

Can You Freeze Them?
Yes! These are great to make a few batches ahead of time and wrap them or put them in a freezer-safe container and freeze until you need a fast dinner idea.
One thing to note when freezing these is that it needs to be done without the toppings. Just add those after you have thawed and reheated the little Whole30 meatloaf sweet potato muffins.

How To Make This Recipe:
First, you want to preheat the oven to 375 degrees.
While that is heating give the sweet potatoes a good scrubbing and dry them off. Next cut the potatoes in half horizontally. Place the potatoes on a baking sheet with the skin-side up.
Place the baking sheet with the potatoes in the heated oven for 30 minutes.
While the potatoes are cooking, dice the onions into fine bits.
Then in a large mixing bowl, add diced onions, beef, flour, eggs, basil, garlic, pepper, and salt. Mix until combined. I just used my hands to do the mixing.
Grab the muffin pans and give them a good greasing. We used avocado oil to grease them as butter is not allowed on these diets. This recipe will make 14 muffins.
Now divide the meat mixture evenly into muffin tins. You want each tin to be filled right to the top. You can back them a little to make sure there are no big air pockets.
Place them in the oven on the middle rack and bake for about 30-35 minutes. They are done when the insides are no longer pink.
After the sweet potatoes finish baking and they are soft, place them on the counter to cool slightly. Then use a spoon to scrape out the potato. Add the scooped out potato to a medium-sized bowl.
Now add ½ teaspoon of salt (optional). Smash the potatoes with a fork until they are nice and smooth. Then spoon the potato onto the meatloaf muffins. You may find it easier to add filling to a sandwich bag or pastry bag and to pipe filling onto muffins.

- 1 Medium Onion finely diced
- 3 Eggs
- 2 lbs Ground Beef grass-fed
- 1 Tsp Dried Basil
- 1/4 Cup Cassava Flour
- 1 Tsp Garlic Powder
- 1/2 Tsp Black Pepper
- 1/2 Tsp Himalayan Pink Salt
Sweet Potato Topping:
- Fresh Parsley optional
- 6 Medium Sweet Potatoes
- 3/4 Cup Whole30 Compliant Barbeque Sauce
- 1/2 Tsp Himalayan Pink Salt
