Homemade Pumpkin Pie Pudding
Instant Pot Pudding
I do not know about you, but I am crazy over pumpkin anything! If that sounds like you, I have an Instant Pot pudding recipe for you to check out. It is a recipe for homemade pumpkin pie pudding!
This recipe is made from scratch and is made with only 1/4 cup sugar. If you are someone that can not have sugar, feel free to use your favorite sweetener.
One thing I love about pumpkin recipes is all the extra fiber you get when eating pumpkin.
For this recipe, you can either use a 15 oz can of pumpkin or cook your own. As for the 12 oz can evaporated milk that is used, you can use normal or fat-free.
This Instant Pot pudding recipe is made in the Instant Pot, but you can just as easily make it on the stove top as well. I think after you try this pumpkin pie pudding, it will become one of your must make fall recipes!

Homemade Pumpkin Pie Pudding In The Instant Pot
This Instant Pot pudding is such an easy way to have that wonderful taste of fall. After trying this pumpkin pie pudding, I am sure you will love it as much as we do!
Ingredients
- 1 Tbsp Vanilla
- 1 Tsp Pumpkin Pie Spice
- 2 small Eggs or 1 Large
- 1/4 Cup Sugar
- 3 Tbsp Corn Starch
- 15 oz Pumpkin Puree
- 12 oz Evaporated Milk
Instructions

In mixing bowl beat eggs until fully mixed.

Next, mix half the milk, pumpkin and the vanilla into the egg mixture and set aside.

In the inner pot of your Instant Pot, mix sugar, spice and corn starch together.

Then push the saute button on your Instant Pot.

Slowly add the other half of the milk into the dry mix in the pot. You want to be sure to keep stirring.

Cook like this for about 3 minutes while stirring the whole time. After 3 minutes, you should have a pudding-like texture.

Turn off the Instant Pot.

Slowly add the pumpkin mixture into the pot with the pudding mixture. Blend well.

Now turn the Instant Pot back on with the saute button and cook another 3 minutes. Again be sure to keep stirring the whole time.

Next, remove from heat and pour into dishes and allow to fully chill.
Recipe Notes
