When you are eating low carb it can be hard to find tasty new recipes that are not just all about meat. I am going to share with you this Keto loaded cauliflower casserole recipe. It is pretty easy to make and sure to please!
This recipe only takes six main ingredients and then salt and pepper to taste. This recipe is made using pre-frozen riced cauliflower rice, however, you can use fresh if you would like. To make your own, you can simply cut the cauliflower into chunks and toss into a food processor. Then just pulse it a few times until it is the size of rice pieces.
This is a great recipe for a family dinner or to take as a side dish to a dinner party. I like taking different foods like this as it gives others on a low carb diet an option to the normal mashed potatoes, stuffing, pasta salads and so on.

Keto Loaded Cauliflower Casserole Recipe

Ingredients
- 12 oz packages of frozen riced cauliflower, cooked according to package directions
- 1/2 Cup Sour Cream
- 1 1/2 Cups Shredded Cheddar Cheese
- 3 Green Onions diced
- 5 slices Cooked Bacon diced
- 1/2 Tsp Garlic Powder
- Salt & Pepper to taste
Instructions

Preheat the oven to 350 degrees and spray a baking dish with non-stick cooking spray.

Combine all the ingredients (other than 1/2 cup cheese) and pour the mixture into the prepared baking dish.

Sprinkle the half cup cheese over the top of the mixture.

Bake for 15-20 minutes or until heated through.
