Low Carb Fried Green Tomatoes
Tomatoes if one of the must-have when we are planting our garden! There is just something about that flavor of a homegrown tomato that a store bought one just can’t touch. However, you don’t have to only enjoy them when they are ripe. There are many recipes out there to use green tomatoes on and I am going to share my low carb fried green tomatoes recipe with you.
Using green tomatoes for recipes is a great way to enjoy the taste a little sooner than waiting for all the ripe ones. It is also a great way to save those last few tomatoes that may not ripen before the first frost hits.
While this recipe is not super healthy as you are still frying the tomatoes, it is a little healthier than a lot of the classic options out there.
To make it a little healthier I used coconut oil to fry these. I also only use just enough to coat the bottom of the pan. You need it to fry the batter on the tomatoes, so lightly coating the pan works just fine and there is no need to deep fry them with lots of oil.
To make this a low carb fried green tomatoes recipe I used coconut flour in place of regular flour and cornmeal. It gives you pretty much the same texter with a lot fewer carbs. If you want to take the carb count even lower, you could also use almond flour.

Low Carb Fried Green Tomatoes With Spicy Dipping Sauce
Ingredients
- 3 large Fresh Green Tomatoes
- 1/2 Cup Coconut Flour or almond flour
- 3/4 Tsp Black Pepper
- 1/4 Tsp Onion Powder
- 4 Tbsp Coconut Oil
- 2 Eggs
- 2 Tbsp Hot Sauce used Frank's Original
- 2 Tbsp Paleo Mayo
Instructions

Slice the tomatoes to about 1/4 inch thick slices.

In a small bowl beat the eggs until fully blended.

In another bowl mix flour, pepper and onion powder until fully blended.

In a large skillet heat coconut oil on a medium-low heat.

Dip the tomato slices in the eggs and then into the flour mixture making sure they are fully coated.

Place in the heated oil pan and cook a few minutes on each side until golden brown.

After golden brown remove from pan and place on a cooling rack for a few minutes for any extra oil to drip off.

For the dipping sauce, simply mix the Paleo mayo and hot sauce together until fully blended and serve with your fried green tomatoes!
