Pineapple Blueberry Popsicle Recipe
If you could use a nice healthy frozen treat to cool off, I have just the thing. Below you will find a pineapple blueberry popsicle recipe.
This recipe will fit with just about any diet as it is dairy free, gluten free, Paleo, Whole30, vegan, and no added sugar. But don’t worry, it is still loaded with lots of flavor! It makes for a nice frozen but healthy treat for the summer.
To make this recipe I use coconut milk. You can buy store bought if it fits your diet needs or do as I do and make your own so there are no extra additives. If you need to know how to make your own, you can check out my post on How To Make Coconut Milk. You can also replace the coconut milk with the milk of your choice.
This recipe will make six popsicles when using the mold I used. I used the mold found on Amazon here.

Pineapple Blueberry Popsicle Recipe
Ingredients
- 1 Cup Pineapple Chunks fresh or frozen
- 3/4 Cup Blueberries fresh or frozen
- 1 Cup Coconut Milk
Instructions

Layer the pineapple and blueberries in each of the molds.

Pour coconut milk into each mold over the fruit. Be sure to stop a little before the top to allow room for freezing.

Place sticks in top of the molds and place in the freezer until frozen solid. Takes about six hours.
