Strawberry Instant Pot Jam
Have you ever made Instant Pot jam? It really is pretty easy! Plus by making your own jam, you can control what sweetener is used, how sweet it is and what additives that are put in it.
I am going to share my recipe for strawberry Instant Pot jam. While this recipe is for strawberries, you could swap them out with any of your favorite berries
With this jam, it is not as thick like jelly as most others. That is because this is a low sugar recipe and I choose not to add in the extra additive like pectin (because it has extra additives in it) but I don’t mind how it turns out. It is more like a thick, thick, thick liquid but still spreads on a piece of toast nicely.
If the thickness does not work for you feel free to change it. You can either add in a cup of sugar or use 3 Tsp of Low or No-Sugar-Needed Pectin to thicken it up more.
Before you start your Instant Pot jam, be sure you are using clean berries. Wash them how you would normally wash your fresh produce or by using my strawberry wash that is also great for other produce.
This recipe will make a one-pint jar of jam. Or you can split it into smaller jars. If you need more, you can very easily double the recipe.
Ready to get started?
After you have washed your berries, chop your strawberries into chunks. Just a quick note that the amount of strawberries used in this recipe is after the green has been removed and any bad spots have been removed.
Now add them to the pot with the dates and lemon juice.
Put your Instant Pot on the saute setting. Saute the mix for about 3 minutes making sure to stir frequently.
Then place the lid on the pot and close the valve to seal. Push manual high and set the timer for 3 minutes.
After the timer goes off DO NOT open the valve. Allow it to naturally release. That will take about 6-8 minutes. If you open the valve for fast release it will spray jam juice EVERYWHERE lol.
After the pressure has naturally released, open the lid. Then either carefully dump mixture into a blender or use a hand blender to mash all the chunks.
Then simply pour into glass jar, allow to cool and then store in the fridge. If you want to store long term, you can either freeze after it cools or you can use water bath canning.

Strawberry Instant Pot Jam
Ingredients
- 1 lb Fresh Strawberries 1 lb is weight after greens removed and any bad spots
- 5 Dates about 40 grams
- 1 Lemon about 1/4 cup lemon juice
- Optional:
- If you want it thicker you can either add in a cup of sugar or use 3 Tsp of Low or No-Sugar-Needed Pectin to thicken it up more.
Instructions

Add dates to inner pot.

Squeeze juice from lemon and put in pot (be sure not to add seeds)

can you use your pressure cooker instead of ina pot

You can! Depending on what cooker you have you may have to use different buttons and the time for the first part may vary slightly. Like for the Power Pressure Cooker XL, you would push the slow cooker button to start as it does not have a saute button like the Instant Pot does. You just have to be sure that first step is done in some way before you can do the pressure cooking part. That is because you need that liquid to release from the berries before you can pressure cook.

Are the dates necessary? If they are there as a sweetener, could I use Truvia and the low sugar pectin?

Hi Cathy, yes I used the dates as a sweetener. I have not made it using Truvia and low sugar pectin, but I do think you could and it would turn out just fine. If you try it that way, let us know how it turns out.
